Dairy Free Prosperity Banana Bread with Chocolate Fudge Icing

Greetings Witches! 

Recently, I shared a photo of my chocolate fudge banana bread on my Facebook page, and I was absolutely delighted by all the interest it sparked! Many of you asked for the recipe, so I thought, why not turn this into a blog post? It’s a little different from my usual content, but I’m excited to share it with everyone who wanted to recreate this rich, comforting treat at home. With a touch of magic from nutmeg, known for its prosperity-attracting qualities, this recipe brings warmth, flavour, and a little bit of witchy charm to your kitchen.

 

Ingredients for the Banana Bread:

 

140g self-raising flour

140g golden caster sugar

140g dairy-free butter (Flora unsalted works wonderfully)

2 overripe bananas, mashed

2 eggs

1 tsp baking powder

1 tsp ground nutmeg

 

Chocolate Fudge Buttercream Topping:

 

100g dairy-free butter

Icing sugar (about double the amount of butter, or adjust for desired sweetness)

Half a bar of NOMO dairy-free chocolate fudge, melted

 

Instructions:

 

1. Preheat and Prepare

Preheat your oven to 180°C (350°F). Grease and line a loaf tin to prevent sticking.

2. Combine Wet Ingredients

In a mixing bowl, cream together the butter and caster sugar until light and fluffy. Add the mashed bananas and eggs, mixing until fully incorporated.

3. Add the Dry Ingredients

Sift in the flour, baking powder, and ground nutmeg. Gently fold the dry ingredients into the wet mixture until just combined.

4. Bake

Pour the batter into your prepared tin. Bake for around 45 minutes. Test doneness by inserting a knife into the center; if it comes out clean, your bread is ready. Allow to cool completely.

5. Prepare the Chocolate Fudge Buttercream

Beat the butter with icing sugar until creamy and smooth. Melt the NOMO chocolate, let it cool slightly, then blend into the buttercream. Place in the fridge for 20 minutes to firm up.

6. Assemble and Serve

Spread a generous layer of the chocolate fudge buttercream over the cooled banana bread.
