Raspberry, Chocolate and Vanilla Overnight Oats

This is a bit of an odd one as I don't often share recipes via my blog, other than a Samhain Recipe blog I shared around 5 years ago.
If you follow me on Instagram or Facebook you may have recently seen an image that I shared of my overnight oats. This led to quite a few requests for the recipe, so I thought I'd share it here so you are able to find it again quickly should you need it.
The recipe for overnight oats is super simple and they are really quick to make. They can be made to be suitable for vegan consumption via the use of almond milk or other milk substitutes.
There is no end of fruit and flavour combinations to add to your overnight oats such as peanut butter, chocolate, maple syrup and honey. You can also add some granola if you like a little crunch or protein powder for longer lasting energy. Sugar/honey/syrup can be substituted for flavoured stevia drops if you wish to keep those calories down (as I always do).
I like to make my overnight oats in batches to last me from Monday to Friday. This can be done by storing your oats in the fridge in an airtight jar or container until you are ready to eat them. A batch will last for 5 days when stored as above.
What you will need for my pictured recipe:
- Old fashioned rolled oats
- Milk or milk substitute (such as almond milk)
- Plain Greek Yoghurt (This can be omitted to cut down on sugar should you wish, but it does make the oats extra creamy)
- Chia Seeds
- Vanilla Stevia Drops
- Chocolate Chips
- Frozen or fresh raspberries
- Jars to store your overnight oats (I use 250ml wide mouth jars but you can use any size that suits you best)
Method:
In a jug, combine half a cup of rolled oats with half a cup of milk and half a cup of greek yoghurt. If you aren't adding the greek yoghurt then add one cup of milk instead of half.
Mix in a teaspoon of Chia seeds and a few drops (or more depending on your taste) of vanilla stevia drops. Add a handful of raspberries and your preferred amount of chocolate drops and give everything a good stir.
Pour the mixture into your jars and top with a few more raspberries and chocolate drops.
Seal your jars and pop them in the fridge. Its best to store individual portions in separate jars as this will keep everything fresh and sealed until you're ready to eat them, ensuring that they keep for the full five days.
Overnight oats are meant to be eaten cold, straight from the fridge. This may sound odd if you're used to heating yours but please give it a go, as they are absolutely delicious! The oats are at their best when they have had around 8 hours or more to set but can be eaten in as little as 2-3 hours if you're in a hurry.
